Don't know about horses, but in human terms I believe an iridologist is a complementary/holistic therapist who uses an examination of the patients' eyes to diagnose illness.

From my very limited knowledge of it (looking at a couple of websites) I believe it is the science of looking at a horse or other animals eyes to try to see what is wrong with it.

In a nutshell:
The eyes are connected to the brain, and therefore in some scientific way to all the other parts of the body. Different parts of the iris are "connected" with different parts of the body. When things go wrong with parts of the body the area on the iris they are connected to becomes discoloured.
An iridologist looks at the eyes (or a very good photo of them) and says what areas of a horse there are things wrong with. It doesn't show pain as such, just areas of the body that are not as they should be. Old injuries and new both show.

Apologies for the terrible description - I saw this thread and thought "I can answer this!" but typing it and knowing it in my head are two different things lol

Hope this helps.
