Jumping saddle v Working hunter saddles

I have 2 saddles to try out over the next week from my saddler, one is a jumping saddle - nice and forward cut, extremely comfortable fits my leg lovely and for the first time ever i feel really secure in the seat - i am 5ft10 with very long legs!! the other is a very smart straight cut working hunter saddle which looks lovely on my cob and the shape really shows off her shoulder, the seat is bigger than i normally go for - 18" but it fits me nicely also. We will be mainly hacking over winter to keep her ticking over and do the odd w&t test. No jumping till next summer so no really need for the jumping saddle other than it feels lovely and secure. Next spring there will be a few showing classes under saddle so am rather liking the idea of the straight cut one. I will be trying them both out properley this week, schooling and hacking etc and have a w&t test on sunday.
Problem is my mare is 15hh of very wide cob, so anything gp cut rolls back because she has big moving shoulders, but the straight cuts offer little support for my long legs!! i suppose the jumping saddle could be altered with various gadgets/sticky pads and breast plate to stop it moving?? or i could put up with the straight cut one and ride long??
So if i prefer the jumping one would that mean i would have to go for jumping cut numnahs/saddle pads? also how are they for dressage/flatwork??
Working hunter saddles which are very straight cut - will i need a dressage numnah/saddle cloth or will a gp be okay?
Only ever had dressage and GPs before so any tips would be appreciated!
In an ideal world i would buy the 2 of them but sadly budget only stretches to one!!

yes jumping cloths for jump and dr for WH

I have done DR in my SJ saddle no problems.

you may find on a cob a WH fits him better as more room for shoulders, Also if you want to do more than RC then you would need WH to show the shoulders off

I was told you can easily SJ upto 3ft in a WH saddle although I never did in mine, only ever went to 2ft 6in as didn't feel secure enough
 
Not many cobs can really cope with the cut of a jumping saddle - if you really like it and it fits him well, but with a decent wide head and gullet, then you could use a sheepskin half pad - it lifts the saddle fractionally away from the shoulder and means they move the saddle less.

Can you really only choose between these two saddles? There are plenty of VSD and WH saddles that would give a little more room for your leg, work well for a cob and be suitable for the show ring.

These are 2 saddles out of around 20 that was brought down by saddler!! he has more which he can bring next week but has left me with the two best fitting ones or me and the cob. :)
