Just don't know what to do re- stifle/lami

Mysti got acute laminitis last June in 3 feet but recovered pretty well. But I knew something wasn't right as soon as I started lunging her again as she was practically collapsing on one rein :( I asked the vet and sent her a video and she diagnosed a slipping stifle, reccomended gentle lunging and oil in her feed and she was sound again. She's been sound for a few months now but since December has started to loose weight again and get a bit grumpy (she always is when uncomfortable) so I've upped her feed slightly and she's started to gain weight again. But I think it's come a bit too late for her stifle. I tried to lunge her tonight and she was a totally **** but I finally saw her stifle slip again so at least know what I am dealing with. She reared up at me twice tonight so I know shes in pain again :(
But the main problem is .. How am I ever going to find a balance between the two problems, one requires her to be slim, healthy and fit and in during the worst of the grass and the other requires fat to help the joint which obviously isn't helpful to her lami and her moving as much as possible so out 24/7 really but again impossible with the lami :(
I'm actually to the point of tearing my hair out, I solve one issue and that causes another :( so what do I do?
 
its hard to say without knowing what has caused the stifle prob, but i think i would take her out for walks inhand and not lunge, or when poss ride out and avoid sharp turns to improve general fitness which could tone up the whole horse including the stifle and would definately help with the lami as it would improve the all important circulation in the feet and help control weight, do you know exactly what has caused the stifle problem?
 
The stifle problem was originally caused by the lami where she didn't have weight to drop (wasn't overweight) the sudden diet caused the fat around the stifle to disappear :( shes not ridden at all and walking her out is tricky as she's very unpredictable at the moment I think it's where shes expecting it to slip

.. She rears, prances and p*sses about at the mo which is how she gets when she's worried and I havent got a bridle that fits her at the mo :(
