My Hunter is very fit and is looking fine weight-wise except for I feel he is lacking a bit of condition on his hind quarters. Anyone know how I can build condition on his back end a little more?

He is fed ad-lib haylage and is currently having:
1 x scoop Mollichaff Condition
3 x cups of Baileys Performance Balancer
2 x scoops of Alfa A Oil
1 x scoop Baileys Topline Conditioning Cubes
1/2 x scoop of Barley Rings
Carrots/Apples

This is split into three feeds. He has a fantastic topline and is very well muscled, I just feel he could do with carrying a little more weight behind though. (yes I am fussy!)

Any ideas?

You can't target specific areas to add weight - well, if you can you need to patent it! As piebaldsparkle says you need to work him correctly to get the muscle on, hill work would be excellent.

Nothing like hills for a rock hard arse

Agree with hill work, and keeping them on a hill :D Works wonders with my Appy girl, I am also sure it helps that when in the field she goes everywhere with a purpose :) The others mosey about, she sets off at a brisk walk! The other thing I found was the usual loads of transitions. I also find brisk walking down hill really helps to build up their bums.

Agree with what everyone else has said, it is work..............though I am really dissapointed at how my horses are looking this winter (is anyone else?) they are getting masses of feed, are warm and have decent feed (and have been wormed) but are not looking A1 - certainly not RSPCA cases, but not as well as I would like them to be. I suspect that when they are turned out it, it is so damn wet.................
