Ok, 6 acres, some of it decent, some of it quite tufty and so not so good. All poisonous plant free, and not sour because in fact horses haven't been on it for many years - if at all. Clay soil, pretty hilly in places. So far I've got sheep on it and the post and rail man is coming to create some paddocks, in prep for two horses. How many paddocks would you split it into? I was thinking 3? Other than poo picking, can anyone give me some tips and advice regarding maintaining what I have and improving the rougher stuff please? All bits of info welcome! Thank you guys.
 
Depending on how many horses you are planning on having there I would probably split it in to three then you can always sub divide with electric fencing. We do it where I am and it works well.

Personally I would only fence the edge and subdivide the rest with electric tape as you think you need it. I get a year's supply of haylege from mine, and keep 2 on all summer (not at all in winter) on 3 - 3.5 acres. I make 2 small paddocks for spring till the haylege is taken then horses and some cows go on the cut area (cows are needed to keep the grass short!)
