my friend who owns the most laid back pony is frightened to death of putting it over a little jump, this pony is well capable and not in the slightest a bit bothered, perfect to get your confidence on, but the owner insists on having a bit of 'dutch courage' before hand

what should be done about taking this little 'snifter' and replacing it with something else

I'd just let her do whatever she feels she needs (without being acctually drunk obv!) as if pony is that good it'll go fine and she wont need it next time. Just something to get her over the initial fear.
 
suggest to her getting an instructor if she hasnt allready got one, or see if someone else will take him over one, to show her that itll jump fine

if it scares her that much then she should concentrate on doing things she likes and dont scare her ... my friend is exactly the same laid back pony with a neat little jump not unseating approaches jumps in a little dolly canter... but my friend is too scared to jump... so other people jump her pony as he does enjoy it. sometimes though going schooling xc helps doing tiny fallen logs etc...

sometimes you just have to come out of your comfort zone and try something different! P.s. i think i'l go and buy her some more martini

If a drink does it for her the first couple of times what is the harm, as long as it is a small snifter.
At the end of the day most people have a quick drink before going for a days hunting so i cant see the prob.
Dutch courage and all that i am sure after a couple of times jumping her horse she will see there is no need for it
