Do you Project Manage your yard? i.e. do you have tasks, end dates, objectives etc...and do you track them as you work through it and evaluate costs etc... involved?

Not the yard, but the house rennovations, yes. If we didn't have some kind of schedule we'd be in a right mess. I also love logistics so working out when stuff needs to be done, what order to do it in and when to get the supplies in is quite fun.
If you are running somewhere commercially (for profit) I believe it should be run competently to benefit both you and your customers. To me that does involve a programme of tasks - even just basic maintenance like painting, roof and gutter cleaning, weeding, fencing etc. It's like all things, a bit of time spent organising means things get done much more easily.
