I think I have a slight case of Munchhousen by Proxy !! my poor pony had a bout of lami earlier this year and with a lot of work and help from the vet and my farrier he is now fine and back in work and up to fitness. However every time I watch him I'm looking for problems or niggles or signs that he's not right. I'm sure I'm seeing problems that aren't there, is there any way to get a horse an MOT :D

Not Munchhousen, just perfectly normal as far as I'm concerned. My horse has had previous lameness issues and every stumble or wrong step she took I would be panicking thinking she was lame again. Everyone told me just to get on with it and enjoy my horse, so that's what I'd say to you. Sounds like you have done all the right things to keep him sound.
If you are seriously concerned the vet would do a work up - but it would cost you.

Not Munchausen’s by proxy (which is where a caregiver intentionally harms his/her charge to garner attention) ;) maybe a little paranoid... but that is to be expected so soon after an awful illness like laminitis.

And yes, it is perfectly possible to get a general health check done for your horse or pony.
