Do new saddles take a while to settle or is how they fit when put on they will stay? I imagine it will settle a bit but what exactly will happen?

Depends what they're made off to an extent.
New leather takes longer the 'break in' then synthetic and some flocking types take longer than others. Foam and air filled saddles however take no 'bedding down'.
A normal new leather saddle will take 20hrs+ of riding to bed down as the flocking compacts and should be rechecked for fit after that. The saddle will drop down, esp at the front.

Its a kent and masters leather saddle, I'm not sure what its flocked with but dropping slightly at the front is exactly what I'm after! Its had 3 hours use so far so bit of a way to go if it does need 20 or so hours
