i am truly admitting my ignorance here, but what does homozygous mean??

It's to do with genes

It means that the offspring of that horse will definitely be whatever colour the homozygous horse is.

if for an example a stallion was homozygous black, it means that it will throw black offspring, i think there are exceptions though...

In simple terms a horse carries two genes for colour, one from the father one from the mother. If the colour genes are the same it is homozygous.

Only if the homozygous genes are dominant in either the stallion or mare will the mating always throw that colour foal.
