Pair driving peep's question

Just watching the remake of Poldark.....and the cartridge horses all seem to trot on the same diagonal.... Do they self change to match each other ? Or is there a way they are asked to trot do the are on sequence and what happens in canter are they all on the same lead and again how is this done ?

Horses naturally go in step especially those who have very similar strides.
