I've done both and it can be a very different dynamic. But double the fun :)
Off the top of my head they have to be well matched, size and gaits. Helps if you have one experienced to baby the inexperienced one along. Is your carriage convertable? Also rein arrangement will take a bit of adjusting and rebalancing again and again to find out your's and their preferences. For instance one may carry their head higher and you'll have to take that into account. Pair driving is a fantastic rush and my poor brain is always frazzled having to keep an eye on two rather than one. Also take into account how much they can feed off each other or one can be sneekily taking the back seat letting the other do all the work so you're constantly balancing and rebalancing. So essentially double the driving which is why it feels so intense. Love it.

I have done both and driving a pair can be so much fun, but double the carefulness needed, watching for either to see/react to things.

As mentioned, they must both be of a similar size and gait, and of course like each other. Could I suggest getting an LHII to take out with a pair a couple of times?
