I was supposed to go but can't get time off work. I don't know where you can park but may I recommend La Commanderie:-

It stocks all the local wines (Madiran, Jurancon) at wholesale price. The town of Pau is really worth a look as well, the Boulevard view should be incredible at this time of year. And if you want a jaunt into the mountains, the best valley is the Aspe Valley, particularly the Cirque de Lescun:-

Thank you for that Kit and I am sorry you cant get there this time.We have been to Pau before for a quick reccy, but will research your recommendations.One thing we promised ourselves was another bottle of Jurancon though!Going to put this in competition riders column and maybe try Eventing Forum, but I am not a BE member.Good luck to those Brits who are competing.
