plaiting for dressage - please help

I am going to try and plait my horses rather unruly mane for a dressage comp this weekend. Trouble is it is rather thick and long, but I can pull it or do anything else with it before hand.

Anyway the main points I am just wondering are: do you plait from the opposite side, and how are you supposed to fold them up?

I tried this evening, but i couldnt get them to look like a plait, just a bunched up bit of hair.
 
I plait on the side the mane falls, stitch the bottom of the plait then pull the cotton through the base of the plait as near the neck as poss then just roll. Practice makes perfect. Yuo need to make sure that as you plait you keep it as tight as possible otherwise when you start to roll it up it will fall apart.

I tried plaiting once. After 30 mins I had had managed 2. 1 fell out and my finger was still attached to the 2nd. We didn't bother again...
