Poke-a-nose!!

My little pony does this when she doesn't want to do something & now we've got another one that does it whilst schooling... goes along nicely and starts to accept the bit and soften and then suddenly pokes his nose... completely unseats me and we're back to square one!!

We had his back checked last week and his teeth are being done on the weekend - my pony however has had both checked and had no problems with either but still does it - help!!

Any ideas?? And exercises I can do to help?? I try and keep my hands soft but I'm finding its a fine line - too soft and my reins get pulled through my hands when he does it, too tight and I get pulled up and over his ears!! I'm not the greatest at schooling so I'm really not sure how to deal with this!!
 
The new boy we've tried in a snaffle, a loose ring french link and now a 3 ring gag as i was struggling to stop and he kept hauling me around the sandschool

we've tried with and without a flash, and with and without a martingale - nothing seems to have made a difference

Just to add the new boy hasn't done much in a long time - he was brought in from the field about a month or so ago and started again slowly, and now I've just started riding him and trying to school him. He's a bit all beans and no brains, he just wants to fly around the school really!!
