I think Mattes are better than both, the sheepskin is better than anything else available, and the shims actually sit exactly where they should and aren't huge great things that sit under way too much of the saddle, plus they are felt and can be trimmed in layers to make wedges, unlike pieces of foam. More stable than foam shims too. Sorry if that's not the answer you're looking for :-s

That's a great answer, thanks! Are all the Mattes ones sheepskin, and how thick are they? The thermatex is quite thin.
 
Its quite a good pad IMO. My mother uses one and it fits great. However, it was too small for my saddle (In length) and didn't sit well at all.
I've now got a Le Meiux Prosorb which I prefer but much more expensive that the PE ones at the moment.
 
The Mattes is thick, it is British sheepskin. If you are shimming up the front anyway you would probably just put one less shim in compared to a thin pad. They make a cotton one too, if you buy it as a saddle-coloured half pad it's barely noticeable. A lot cheaper but not so good for true remedial fits, I personally like sheepskin and would use one if I had a horse currently, it wicks sweat and absorbs concussion.
