I'm in the UK but have been here.
They have a summer autumn & winter ranch. We were there on a ranch week but if you want real city slickers go for the cattle or horse drives.

Equestrian Vacations has a Texas Natural Horsemanship/Cowhorse package that features cow horses and cattle drives. Also you can go to www.duderanch.org, this is the trade association for dude ranches. You can search through their site for a ranch that suits you.
Personally, having dealt and still dealing with cattle for years, I'd rather go for a nice relaxing trail ride and camping trip minus the cows! Actually, I'd like to go to the UK and do a horseback tour of the countryside.
Be prepared for a different level of horse care on a ranch. Most horses live outside 24/7 even in harsh weather, have never seen a rug, and travel, completely tacked, without boots in open stock trailers.
