I can't recommend FJ Lucas highly enough. First class work, service and products. They built ours, and they were prompt, efficient and sensibly priced.
One word of warning. If you're planning to have full blown stables on skids, then I'd think very carefully first. After several moves, you will run the risk of distorting them, and I would think that the first problem would probably be that the doors would no longer fit.
A firm, and impacted base of chalk would be a better idea, I would think. It's free draining, relatively cheap, and always sweet smelling. There are several studs in Newmarket, and many of them have gone for the chalk based option.
Hi Delivered to the east (Norwich) National stables in kent were excellent when I had mine a few years ago delivered and built in a day three stables and shelter arrived exactly on time 7.45 am Having done a three hour journey two lorries three guys who all worked well as a team cleared up after themselves. The stables were cheaper than Lucas and the materials were of a thicker(hopefully stronger) grade. So dont limit your self to Norfolk builders.
Ive just used Redmire Stabling (based in Sussex) to supply and build my 2 double mobile field shelters with stable conversions for my new yard in Lincolnshire. The service i received was fantastic, they were in regular contact with me and were very punctual and efficient when building them. I wouldn't hesitate to use them again and would always recommend them to anyone looking for quality well built stables in the future. Heres a photo:

We had FJ lucas stables built 25 years ago & they are still going strong. Never had a problem - they've had several ponies & horses through them over the years - one was a monster door banger - still in fabulous condition, albeit we have creosoted them every few years to preserve the wood.
Lovely old fashioned family firm - would have them again any day.
If you look on their website I think they have prices on there so you'll be able to get a rough idea of cost.
