Rider problem! Snatching the bit when excited!

Sorry - I should firstly explain that the horse has the bit in his mouth but I am sure that the problem with the snatching is me!! My chap gets quite excited when jumping, to define it the 'bouncing and snatching' usually happens on longer distances between fences when I'm trying to keep him up together. Teeth and back etc have been ruled out, he just gets keen but the momentary loss of communication can lead to probs with getting the correct striding. ANy suggestions? Currently in happy mouth jointed 2 ring gag, have tried the 'flexi rein' attachments but no real improvement. I know that I am a stiff, old rider so the fault must be wth me, sorting it hasn'

Personally i wouldnt have him in a gag then, as when u give over a fence the poll pressure is completly lost. So he could be trying to avoid the contact or disliking poll pressure and trying to escape the pressure.

Have u tried other bits? How is he strong- i mean does he grab the bit and go? cos u could try a waterford or roller mouth piece?
 
He doesn't feel what I would call strong - resistant is my description, can;t be described as 'easy' to hold because of the snatches but this only happens when he can move on between jumps, super example is grid down the long side - perfect, flat up the other long is a pain! Maybe poll pressure is the issue but only when we jump. For DR he's ridden in in Neue Schule baucher with no issues whatsoever. It almost feels as thogh he wants to 'get on with it' and has been allowed to by prevoius rider!! I am trying to maintain rhythm and that is whemn we fall apart. Am I making sense?
 
Have u had any lessons? I had to take my mare back to basics so she learnt that i wasnt always gonna help her out and she had to think and balance for herself, how old is he?

But a roller or waterford mouth piece he wouldnt be able to grab and run with
