Riding holidays

Hi, I'm hoping to go on a riding holiday next year, ideally classical riding which has more lessons than riding out. It also needs to be in a warm and sunny place!
Does anyone have advice, experience, tips regarding this?

Spain and Portugal do this kind of holiday and its hot, my old boss used to go to a place every year to Portugal riding highly trained spanish horses I have no idea what its called I would look on line see what you can find.
