Saddle advice please & recomendation for saddler in Derbys!

My new mare came with a Jeffries Falcon Event Saddle. She is extremely fat at the moment due to being out of work for a long time. She has lost some weight in the last month I have had her and although the gullet is OK the flaps have quite allot of space under them at the front.
I am no expert but the saddle is in need of some TLC (new girth straps & re-flocking). I was wondering if the saddle is worth spending on due to the issues with sizing and hopeful changing of horses shape?! Also does anyone know how much this sort of work would cost? Lastly any recommendations for saddler's in Derby/ Matlock areas....?

I use Dosthill. My friend uses Sally Cartwright. Dosthill has squeezed a tree, fitted balance straps whilst I waited & reflocked saddles for me.
