Saddles!! Help!!

I wondered if anyone can help me with my saddle dilemma! I have 2 saddles...

A Kent & Masters S Series dressage which I am finding uncomfortable because the thigh blocks dig into my knees making it really difficult to put my legs in a comfortable and independent position unless I ride really long and it throws me out of balance. The twist is quite wide and because I am very short and my horse is very wide, my legs just kind of stick out the sides!

Also have a Kent & Masters GP, which I have been riding in a lot recently and I am much more balanced in this saddle, I have been doing a lot of jumping in it and recently more schooling and the picture is a lot nicer in this saddle, I can get my legs round my horse too which is great! However, it's not appropriate for XC which I'm hoping to do soon (ish!).

They are Kent and Masters because my horse changes shape constantly. He is 6 and every time the saddler is out (every 3-4 months!) he needs the gullet changing or flocking added/removed.

Can anyone recommend what I can do? I really want one saddle I can do everything in from schooling to XC, but it needs to be on a fully adjustable tree with changeable gullets. Does such a saddle exist?! It also needs to accomodate my extremely short legs!!

I think the seat is too deep. However I haven't ever taken my horse on a XC course yet and we might hate it so it's not a massive concern :)
