Can anyone explain to me the difference in the action of the two types, and the pros and cons? Thanks.

I'd imagine that it would be similar to the differences between a sliding cheek/fixed cheek weymouth.
The sliding cheek should allow the horse a little more movement and feel whereas the fixed cheek will be stiller and more direct in the mouth.
I don't think it will make too much difference in a pelham though as you don't have to combine it with a loose ring or eggbutt bridoon.
