Other than lots of stalls! We are doing tea, coffee, cans of drink, bacon rolls, what about cake? I have a fair few bits of brand new stuff, so would it be worth a raffle for those things?
 
It might be a bit late but if you can sort it your local police doing tack marking is always a good draw.

Sometimes local denists/ vets do stands at these things, what about a stand from local riding clubs.

People might not want to hang around for a raffle draw- but I saw on facebook a lovely lady offering a rug in return for a charity donation, highest offer gave her a cheque payable to horsey charity - I thought that was lovely

Cake is always good !!
 
How about finding someone who can do clipper blade sharpening on site. My club runs equine table top sales and always find that this is quite popular as it saves sending the blades off. Depends if you have a local person that offers this service though.

I wouldn't bother with the raffle as people tend to come and go quite quickly to a sale so wouldn't want to wait for the draw.

The tack marking is a good suggestion also.
 
Do you have a local saddler that has a good range of second hand goods/saddles? If so maybe invite them along
 
I wish I was near you your boot sale sounds great, we just get stalls of mainly over priced rubbish near us, I went to a better one in the summer and got some bargains there at least, all the other ideas sound really good hope it goes well:)
