I have a whole load of text (paes and pages) but what to delete some names and addresses without affecting the layout of the document, etc. Is there a way of doing this or do I have to put XXXX in all the spaces instead?

Depends on the layout I would think.

If it is in lines, i.e. like this:

Jo Bloggs
Bloggs House
Blogg Lane
Blogg Town

you could put returns in, so it takes up the space. Not sure how it's going to look if it's in the body of the text though - if you don't put something in there, it's going to look strange I would have thought.
 
Insert a page break after every page you want to edit. That way you can shift all the other addresses on that page up into the space of the address that you've deleted and you'll be left with a space at the bottom of that particular page instead.
That way all the rest of your data on the other pages will stay where they are!
