.. if you move haylage bales using a 'spike' , as long as you tape/patch up the hole at the end of the bale where you have spiked it, will it be ok?

Id strongly advise against it, why spend all that money on wrap and diesel to wrap the bale to get it air tight just to go and shove a bale spike throw it, , as soon as it goes in, thats it, air is in, ull never get it back out. Tape it back by all means, stack bales in a stack but you have a stack of runied bales in all respect.
If you bale spike them off the pile to move to use then thats fine, its when they are spiked when baled up, even when spiking to deliver bales, i wouldnt recommend it as if you have 4 bales then at least 2 bales wont be used for a week or 2 so they are going to be bad.
Get yourself a bale grab, i can get brand new 1s for £800, i no not cheap but if your serious about making good quailty haylage to then sell on and try make a good reputation for uself but selling good horse haylage then buy a bale grab!!!
