Stainless steel vs Sweet iron vs Copper....?

Planning on buying a hanging cheek snaffle with a french link [5.5inch] for my TB mare...but was wondering whether there are any benefits to Sweet iron & Copper bits compared to stainless steel? I was wondering whether they would help to work towards getting her to accept the bit & play with it...?

Or any other bit ideas welcome!

The way I understand it, is that sweet iron and copper heat up quicker within the horse's mouth and also have a different taste which encourages them to salvate and have a play with the bit more. Every horse is different, but could be worth a try xx
