Inspired by the Tesco thread, I wondered if you could help me create some meals from my palsy cupboard. I have the following items, and really don't want to buy anything else as I am moving house in 6 days time, and eating out for 3 of those. Therefore, don't want to buy anything else, or at least anything I can't use up before I move.
Ingredients:
Rice (by the truckload. Seriously, why I have so much I have no idea, but i have sushi and white rice.)
Herbs and spices assorted - LOTS of different types.
Sugar
Red peppers x 2
Red cabbage
potatoes
Raisins
Dates
oil, and a variety of flavoured vinegars.
A tin of coconut milk
5 or 6 mini pickled onions
Tropical fruit juice
That includes the contents of the fridge too. I was wondering if the coconut milk with some vegetable stock and a packet of tikka masala mix would make a decent curry sauce for the peppers, served of course, with rice?
Do you think potatoes in the curry too?
I also found a packed mix for sag aloo, do you think it would be reasonable without the spinach and just potatoes? Or maybe substitute spinach for red cabbage? And what the heck AM I going to do with a whole red cabbage.
Therein lies your challenge! Any ideas?
There is wine by the shed load and a portion of whatever fancy thing you come up with for your trouble!
