When comparing feeds is it worth comparing the above levels combined or should they be looked at independantly when working out how 'healthy' a feed is?

I think TopSpec once quoted me their cubes were less than 10% combined and if so is this the sort of figure I should be looking at?

I've noticed that Winergy Condition contains Molasses and Winergy Medium contains Molglo instead so I've asked Winergy to advise me of the sugar levels in each product to see what a difference the Molglo makes. However looking at the overall picture I want to see which of the 2 products is 'healthier' in terms of starch and sugar.

Yes, for laminitics/metabolic horses I always combine the starch and sugar content, ideally anything below a combined 10% is said to be safe. :)

For horses with Equine Metabolic Syndrome and Cushings the ECIR horse group recommend less than 10% sugar PLUS starch. However they use ESC for sugar rather than WSC, which is usually a lower figure. However I still will only feed my girl something that is under 10% starch plus sugar - she is very sensitive.:)
