I'd suggest you do need horsey people to fill it in.

It might be worth establishing how big an issue poor rider balance is for the person completing, and whether they consider it an issue for others if not for them, or you can't work out how the price points compare to the need.

You need considerably more info on how it will work before people can realistically cost it - will the app allow real-time access to the data?

Worth investigating how people would compare the value of something like this to, say, mechanical horse lessons, other sorts of analysis etc, otherwise you're judging the use of something like this in a vacuum.
 
Done. Agree with Theocat's points above. Would need much more info about how the device would work before I would consider how much I would pay for it. As it stands, I have put that I am not interested in the product.

How would you separate rider balance and saddle fit?
