Tack room insulation - cork?

We are converting a block built stable into a tack room and just can't decide what to board it out with. Having lined one previously with insulation thick enough for the blasted furry vermin to get in and nest/destroy, initial thoughts were foil insulation with ply boards, but then the 'new' insulation with good properties is apparently cork which of course we wouldn't need to face with ply. Has anyone used cork?

Wouldn't it need facing with something?
It would be impossible to attach racks of any sort to cork alone imo

is it plastered? I found a losing battle with damp in my backroom until I bit the bullet and plastered it
