Thoughts on this daycare set up...

Sorry, I meant more in terms of people's expectations, e.g. how many/long the walks, crating v runs etc
 
I am sure it will be fine. My m-in-law has been ill and my son asked what we would do with her dogs if it became long term. Nightmare scenario!

This. Personally it wouldnt do for me. My dog is perfectly nice with other dogs, however she's a labradoodle so gets very bouncy with new dogs purely wanting to play and some dogs hate that, one dog went for her once because of it so I wouldnt be happy her going out with any other dogs let alone 5 other strange dogs off-lead! I also wouldnt want my dog in a cage and why cant they have permanent access to water in their cages (you said offered water after walks? so effectively they could go 6 hours without water...??). If I had to go to work, I'd get a dog walker to come to my house to walk my dog twice a day (or get up early and do it myself etc. then get someone in a couple of times to let out for pee etc.).
 
I think, in the circumstances you describe, this set up might work for your dog. I think it is preferable that she has company than being left for many hours each day and if you feel confident in the abilities and qualifications of the people running the day care then you could book her in for a trial period to see how she gets on.
