we're considering having a tow bar put on out MPV to tow our livestock trailer with one small pony in (no bigger than 11.1hh) (which would weight about 250-300)

these are the specs of our car:

is it doable??
 
Depends on the weight of the trailer-you've only got 700kg to spare ,less if you carry anything else besides the pony.I don't know of any horse trailers so light.
 
I have the Bateson Derby trailer - takes two ponies or one horse without partition. Trailer is very light, weighs 585 without partition and 610 with the partition. Wonderful little trailer, lovely to tow and so light you can park it by hand.

My gypsy cob travels really well in it, though this year he is now so chunky I have removed the partition.

This may be the answer to your problems - I tow my trailer with my car which has a capacity of 1200k. We are near the limit - Chancer weighs in at 500k but the car tows fine without a struggle. However, I do choose routes that are motorway as much as possible, drive carefully and have to avoid venues with lots of mud - shows so far are fine, but hunting may be difficult.
