After emailing the company, I had a phone call from the boss at said company.
He was very concerned (but insisted they would not accept liability - fair enough for now) and we had a lengthy conversation.
He is sending his designer down tomorrow to look at the girth, saddle etc, and will want to take it all away for examination. (Will get a receipt/written thingy for this)
Mr F (boss) agreed that this shouldn't have happened, even if a couple of threads were loose, the whole thing should not have come apart as it has.
As for horse and rider, both are ok, very bruised, but no lasting physical damage. The car driver, still driving his car but wanting to claim 'right-off'. No idea how that one will pan out.
