Veggie brother for Xmas - help

Arghhh ! Brother has turned up for Xmas and I'm cooking lunch but he's a vegetarian (very strange and unnatural) any ideas other than nut roast. He's quite happy with just the vegetables (I don't mean the rest of the family by that) Any ideas pretty please. Thanks.

Anyway give him all the normal veggies, maybe do him some roast potatoes and parsnips in olive oil seperate from the ones done animal fat.

how about a large flat mushroom stuffed with stuffing and cheese for main course.
Some nice veg soup for starter?
it does not haveto be hard to give a veggie a nice xmas dinner.
 
I usually have veggie sausages, or quorn fillet or quorn escolopes. Quorn sausages are horrible so get Linda McCartney ones. How do u do your roast potatoes and parsnips? If u do them with goose fat do seoerate ones for the veggie with olive oil. Also be careful with the gravy make sure it's veggie friendly :)
 
I'm veggie, tomorrow I'm having roasted tofu marinated in teriaki sauce (I know it's not very Christmasy, but ho hum). Last year I had grilled haloumi. Another easy idea is an onion tart - puff pastry with caramelised onions on it, then ovened.
 
Quorn etc I don't have in stock and much as I love him I'm not traipsing out to Tesco's now. I'll do him the roast veg as usual but not in goose fat. Few good ideas, thanks especially the caramalised onion tart and I have red onions. May have that myself ! I make him separate gravy. Thinking about it, I'm gonna need another cooker and oven.
I only say it's unnatural coz I know that winds him up :D
I'm cooking at mums and her fridge is brilliant, always full to bursting so should find everything in there. Happy Xmas :)

Thanks for the link rhino, I'll have a nosy. Caramalised onion tart with goats cheese is my fave idea at mo as can do that with my eyes shut. I agree with billybob-sleigh re more than just a plate of roast veg but I think that's just because I'm used to looking at a plate with meat / fish on. Failing that I'll get him drunk then he won't care !
