Videos - Is seeing believing?

This is just out of interest, but can home videos be easily edited? I mean like photoshopped to make a horse look like it's jumping a bigger fence rather than editing out bits you don't want people to see.... I've come across films of young horses loose jumping which appear almost impossible yet are there on film. Am I being gullible in believing what I'm seeing I suppose is the question? This is the video that prompted me to ask this question....

(and please don't think I'm trying to advertise this horse, it is nothing to do with me, but I had a horse by Larino and was nosing on YouTube for a video of him and stumbled across this)
 
I dont think its so easy to edit in and i think that video is real, of course the still picture could easily be photoshopped but the loose jump looks real to me, corland always produces good offspring (just realised its the dam who is by corland so not so special but still).... but then i am a bit bias :p!
