Weird TB Horsey Quirks?

hey y’all!
so we recently (literally two days ago!) bought a new horse, he came to our barn yesterday and has settled in amazingly. He’s a 10yo ottb Gelding. however he has some weird tendencies and i’m not sure if they’re normal...😂 for instance, he will put his head sideways as if he has an itch and then curl his upper lip over and suck on it. he will then stand there like that for a while. (his head is low while doing it). I’ve never had a horse that does this before so i’m not sure it’s normal? besides that, when he lays down (which he does frequently. he loves shavings). he makes weird grunt noises. He lays down and grunts as if he is clearing his throat and then when he’s laying down, he puts his head sideways and grunts/groans as if he is going to snort but never does. He doesn’t do it anywhere else.
Today was our first ride on him since buying him and at the trot he randomly starts to spanish walk...nobody has ever taught him it. He’s quirky.
Does anyone have any idea ?😂 i’m lost! maybe he’s just a weird quirky horse.
