what do they protect the horse from or do they not actually do anything?

They are used for flat work. They do offer protection from knocks and they support the ligerments to a degree. I'd get black ones as they dont show mud/school stains like white does. TBH there's not much difference between them and normal brushing boots (except price). Depends what your wantng them for really.

The answer is not much at all- theyre too flimsy to offer much protection from knocks and there's not a chance they can support ligaments or tendons

No. You need to get tendon boots for that.
