I don't bother with keys either (not because it IS a bother but because I don't want a horse learning to 'play' with the bit!)

I generally start with a full cheek Happy Mouth - unless the horse has a low palate/fleshy tongue in which case I'd use a thinner full cheek snaffle, with or without a French Link.
