What flatwork exercises can I do to get my SJ to Think?????

I have a 16.2 Irish mare,had her for 9months now

she was mainly used for showjumping, (bread one foal) so her jumping and canter work is quite established, turnout has been limited due to the bad weather.

She is has turned in to a nightmare since I took her hunting an absolute witch to hack out very spooky.

This has also affected her at a show where she proceded to leap her way around the course in between the jumps and try and bronk on landing,

I need to get her to calm back down and start thinking and listening to me, I worked her today for an hour doing lots of trot canter transitions and she did not break a sweat,

so just wondering if anyone has any exercises I can work on,

try doing lots of leg yield, start in walk, then in trot.
and shoulder in,
leg yeild on a spiral?
how about grid work to get her going forwards over the fences, concentrating rather than trying to dash off?
how about work with poles on the ground to get her thinking about her feet a bit more?

ETA - and transitions, transitions, transitions. up, down and within the paces!
 
I was thinking of giving the jumping a miss for a bit as this seems to be getting her even more excited, and she just loses all concentration or maybe I should just keep doing it till she gets bored of it lol
We havent jumped for a while as the weather has been so wet our menage was water logged.and my trailer was in having a new floor so couldnt get to shows, so maybe thats why she is excited because she loves it so much.

at least im on the right track with transitions and canter spirals.
