What mark should people aim for the riders position and aids in a dressage seat. 10 is pretty much impossible for someone like me but what would be a good score to aim for and how would I achieve that?

Currently very consistent at 7.

I have had a 9 before but that was in a 4year old BE class where i had to sit very quietly on the horses first ever outing where the test went well but could easily have been a complete explosion!!! Normally get about a 6,7 or 8 though

Bear in mind that you're always going to struggle to get a collective above the majority of marks in the test. You can get a good riding mark on a misbehaving/green horse (usually with a comment like "tactfully ridden" :D ) if it's showing moments of good work but since part of the mark is for use of the aids, how the rider affects the horse is always going to come into it.

I'd think a 7 is pretty good. If the rest of the test is 7's too, then that a 70% test - I'd be happy with that!

As Tarrsteps says, if you are not getting above 7's in the rest of the test then you are very unlikely to get above that for your riding.

In my dark and distant past I have had a 9 - but it was a one off. Normally thses day I get 7 with the occasional 8.

This. Just look at Edward Gal's tests at the Euros - now he is one of the few riders who normally score 10s for position, but he got 7s from several judges - that's because the position mark HAS to reflect the general impression of the test.

I got a couple of 8s this year, but am still convinced the judges were drunk, also because the tests themselves were in our normal mid/high 60s range ;)
