What to do...

I have a 15.1 tb chestnut mare :), shes 15 and ive had her about 2 and a half years. She was a broodmare until she was 11 and from what ive gathered, she hadnt done much previous to that. Shes been plagued with problems and trusting issues and after quite a long time shes now really come into herself and is lovely. The problem ive had since having her is that she constantly leans on the bit and in 3 years ive never got her into the position where i feel comfortable and confident with her. Ive tried different bits, tried different ways of riding but nothing seems to be working. At the moment shes extremely excitable and after being lunged and ridden shes still on edge. i know its probably the spring grass and eventually she will calm down. Out of the bits ive tried ive used a waterford snaffe, loose ring snaffle, 3 ring gag, jointed pelham ( i have breaks but it winds her up even more ), and a fulmer. I also do have a little disability if you can call it that with my left knee meaning that bending left proves a little tricky with her falling in. She can also be quite unusual when i put leg on, she can either be extremely sensitive or completely dead! I have done sj with her but its always at a very fast speed, she can clear them thats no problem but i would like to just calm her down and collect her up a little, mainly to get a decent stride!!
There is nothing physically wrong with her from what i can tell, her teeth and feet are fine and ive had all the muscles loosened up :)
Im just wondering if anybody had any thoughts for what i could try? She's a lovely natured horse but just very quick and it can get stupid!

Sounds like, maybe she just needs more work??
Rather than changing her bit.. I dont know what would be best
I would suggest a calmer has well, to help you with the excitability.
She sounds lovely.. (I also just backed a broodmare and Im working away with her at the minute..shes proving very sensible.
lunging, with side reins would help you supple her up, esp on her weaker rein.
