Gather the lunge line in quickly until he/she is on such a small circle that it's impossible to canter. Then start again from walk into trot and then when in a relaxed trot ask for canter. The second he/she goes faster than you want, reel him/her in very quickly and start again. The key is to stop the behaviour before it starts, if you see what I mean. Don't even let the "wall of death" become in any way established.
Try long lines, if that doesn't work try the following...
...As horse tries to cut you up & go faster, walk towards his head / go infront of his movement and push him out with your body or the lunge line. This creates an odd shaped circled & gives me enough time normally to get him back to me. NOT for the faint hearted though.
