Why don't we bit driving dogs?

Just one of those random things that popped into my head really!
At some point in history somebody decided that the way to get the best out of a horse was to use a bit. Why don't sledding dogs wear bits? Do ridden camels and elephants have bits? Not meant as a 'bits are bad' or 'you must always use a bit' post - just musing really!

Because dogs' mouth conformation doesn't lend itself to bitting - horses' mouths do.

Camels have nose pegs and elephants are moved with an ankus, a hooked goad.
