I had half of my 6 acre field cut and baled at end of August,it has since been left without any sheep/horses on it and is at least 5 inches long , I was going to turn out my oldies onto it a strip at a time over a period of time ...concerned about colic, gorgeing themselves etc ...

Shouldn't be a problem so long as they are used to grass and haven't been kept too hungry over the summer. I'm about to do similar, long grass is much less sugary so higher in fibre and better for oldies so long as their teeth are okay.

Our Herd of 4 are slowly but surely having a little more of their field (that's been restricted to them through Summer)...and it's pretty long grass,..fibrous and a good gut filler. As JillA has said,..less sugar in the longer grass, so they're pretty content chewing on the bit of 'extra' they keep getting as these Autumn days are going by.
Eventually they'll be back to having the whole field again through the Winter....and, when the time comes next Spring,..it will be restricted once more...and so the cycle begins again!
