I'm atrocious at pacing, it's super hard to tell sometimes luckily my boss is quite chilled but still. A steady, a good, a quick canter ?? I'm still confused on what it all means and such or even have a feel for it. I don't know if everyone uses the same terms or whatnot but I'm assuming they're universal (or local) since a few new people who naturally have more experience are good at the paces we are told to do so.

Speak to the more experienced people! You will develop feel from experience and I’m sure they won’t mind explaining the terms so you know what to aim for.
 
While they are universal terms everyone’s meaning of them will still be slightly different. Good gallop/quick gallop could be 70-99% depending on the person in charge.
It’s just experience, though if you have a GPS watch you can quickly work out what each is roughly in speed by km
