If it was my horse, absolute first stop would be a different EDT - no doubt. You say the horse behaves out hacking so unlikely to be the bit, I wouldn't change that, particularly if you want to do dressage. Failing that, sounds like this horse has a lot of breeding and is bright and clever...

If your horse goes to bite you, you will not make him headshy by giving him one sharp tap. But be quick. It is not repeated smacking, and as it is not something you have tried, this is what I would do, particularly as you say he was gelded late.

OK quick reply. I'm going to go against the grain a bit here. I think she is relatively forward but is blocking a lot in her neck,from her wither. Tempi is right, you are a lovely quiet sympathetic rider. You ride though with your hands wide, open but very low though which is imo blocking...
