Horse is kept on a private yard owned by a friend and as horse is hers (I have him on loan from her) - there are very few rules, just common sense
Things like field rotation, worming and so on is done by common sense, discussions and mutal agreement.
TBH, right now I wouldn't ask too much of her out hacking - especially as she is beginning to work nicely for periods in the school.
I'd let her enjoy hacking for what it is right now (a physical and mental break from schooling) to prevent her becoming stale and as she begins to find it easier...

Most places would sell it I should imagine although I think I got mine from the local health and herbal store - mine is just in spray form, but I think you can drops as well

I've found the Requisite stable rugs to be fine, like you say not the most amazing but still perfectly adquate - although I can't comment on the turn out rugs.
Saddle and bridle are both black - but having said that, the saddle is synthetic and the bridle is leather, so not a complete match!
Personally, I think it looks smarter if it matches, but for general use it's not the end of the world if it doesn't
