You could take £500 but tell them they will have to buy the tack etc seperately!
I think £1500 is more than fair for this horse and I would be happy to pay that. If horses are advertised for much less than this, they can attract the sort of buyer that noboby who loves their horse wants.

If he were mine I think I would be asking a bit more, especially if you are including all his tack and rugs!
Kind of agree with the installments comment. If £1500 is beyond someone's finances, maybe a large vets bill would be.
