...numnahs/saddlepads 'walk' out backwards from under my horse's saddle within minutes?

I can't use polypads or anything that doesn't have velcro tabs to keep them in place. Even the ones with tabs to run the girth through are no use as it will still slide back and rumple up.

I asked my saddle fitter what he thought, but he said it was probably just the way my horse moves. I'm not entirely convinced, so has anyone got any experience of this?
 
Could be due to the saddle not fitting properly or if your horse is particularly round/has low withers, it could just be prone to slipping anyway. If I were you, I would get your saddle checked by another Saddle Fitter to get a second opinion and if it still slips after that, look at buying a saddle pad which is grippy underneath like this one:
